Ingredients

How did our healthy oatmeal raisin cookie come about? Dr. Laura recounts how the idea for this healthy oatmeal raisin cookie was conceived:
“When I was in medical school, I did a rotation on family medicine at a vegan health institute. I was amazed at what they could make with healthy ingredients. This gave me the inspiration to make my own healthy cookie recipes, such as recipes for healthy oatmeal cookies or healthy oatmeal raisin cookies. When creating the healthy oatmeal cookie recipe, I knew that adding raisins would make the cookie taste sweeter, so I put in some lemon to counteract the sweet. I added cinnamon to give the cookie the right amount of kick. The whole oats and the fruit adds to the whole texture and gives this healthy oatmeal cookie a rich mouth feel without all the fat.”
