This Paso delight follows tradition, (my tradition) gentle and nuanced with bright fruit tones that make your mouth water. Think chocolate dipped raspberry. Great food wine to try with lamb chops or a zesty pasta dish.

5 day Cold Soak, 6 day Fermentation
Blend: 100% Malbec ~ Solana Vineyard, Paso Robles
Barrels: Once used French Oak
Aging: 36 months
From the winemaker: Malbec, one of the 'lost' Bordeaux's, that regained popularity when the great country of Argentina decided to embrace it's glory. Filled with layers of character, and myself being of Argentinian decent, I couldn't pass up the chance to give this a grape a go. I wanted to produce a Central Coast Malbec that is both food friendly, yet voluptuous. Sticking to my early pick standard, I gained the balance of acidity I desired and with extended aging in the barrel the dark fruit flavors came through. To my Argentinian ancestors - Salude!
