Recommended steps: Install Height Adjuster Brackets on your Weber charcoal grill. After lighting charcoal briquettes in a “chimney” spread them out and place the grill grate on the lowest (original manufacturer) cooking level. Lightly oil the grates. Wait a few minutes for the grate to get hot. Sear steaks on this high heat setting for 45 – 60 seconds on each side to get good grill marks. Then safely (using Grill Gloves) raise the grate to the middle cooking level until you achieve desired doneness, per chart below. To slow the cooking process further, raise the grate to the highest level setting. Allow steaks to rest for 5 minutes before cutting. Enjoy delicious and perfect steaks every time.
