Gellan gum is less dynamic sphingolipids single cell bacteria (Sphingomonaspaucimobilis) fermentation spores outside of an anionic polysaccharide , molecular weight of up to 5 * 10 6. US FDA license in 1992, used in food and feed. Native gellan gum containing 46% glucose , 30% rhamnose , glucuronic acid, 21% , 3% acetic acid and glycerides , acetyl and acyl glycerol typically connected at C2 and C6 position of the glucose residues .
Gellan gum is very versatile , primarily as emulsifying agents, suspending agents , thickening agents , stabilizers, gelling agents , film formers and lubricants used in many fields of food , pharmaceutical, oil, chemicals and the like.
