We cook over 500 pounds of pork every day in our brick fire pit grill. The smells and flavor from the pit can attract customers from miles away on a good day so the pit is an integral part of our business. However cooking pork over an open hickory flame is dangerous and small grease fires in the brick "pit" are a normal part of our daily business and we routinely put them out ourselves. However in my 15-years of experience a few fires have gotten out of hand and I understand what a good cleaning means. One day last fall we had a new cook on the line and he had too much pork in the pit and wasn't paying attention when we had a big flare up. In my experience this fire would have been bad and we would have been shut down by the fire department but because of the thorough cleaning job Kescor did we were able to put the fire out and get back to doing what we do.
